I know. I’m an idiot.
And I know I’m an idiot because when I told my wife that I had a great idea for pepperoni pancakes, she told me so. Always so supportive.
Give this a little thought though, sweet pancakes and syrup with spicy, salty pepperoni mixed in. Sounds good huh? I thought so too.
This all came about because my co-worker read my anti-pancake manifesto, being a pancake lover she scoffed at my ignorance and said that I merely haven’t had the right kind of pancake yet. I think she was referring to whole grain or some crap like that, but I like to think outside of the box.
Pepperoni pancakes are my kind of pancakes.
Pepperoni Pancakes
Start this puppy off with your favorite pancake batter. I like Bittman’s recipe, which can be found here.
Once you’ve got that prepared, you need to prepare your pepperoni. Do this by lining a plate with a few paper towels and arranging pieces of pepperoni side by side, then covering with more paper towels.
Place this in the microwave for 20 seconds. This will quickly cook the pepperoni and squeeze out a good deal of the grease as you’ll see from your new orange paper towels.
The pepperoni will now be crispy. Break it into small pieces with either your hands or the back of a spoon.
Start Your Pancaking
Start by pouring your batter into a hot, greased skillet or non-stick pan.
Immediately sprinkle in your pepperoni pieces and make sure to spread them around evenly, wouldn’t want to jip one area of the pancake from the salty goodness.
As soon as you see the edge has set-up and bubbles begin to rise in the middle of pancake, get a spatula in there and flip it over.
While the pancake is flipped the remaining grease in the pepperoni will slowly leach out only to be absorbed by the newly formed pancake. You will be left with soft and fluffy pancakes scattered with crispy pepperoni.
Serving
I like to keep it traditional and serve my pepperoni pancakes with maple syrup. The salty sweet combination is good enough to have you plowing through a whole stack of these bad boys. And God forbid if you have someone over that may have had too much to drink, because they will never cease telling other people about the “totally amazing pepperoni pancakes” you made.
