Is everyone as tired of winter as I am? I find myself wanting to stay indoors as much as possible. The more I stay inside, the more I find myself in the kitchen creating or trying out new recipes. Of course that’s good, because my hubbie and my little peanut end up with the most delicious meals ever! Being in the kitchen a lot, one of the things I love to make are soups and stews. But being a working mommy I like to find as many short cuts to creating delicious and wonderful meals.
After a trip to the grocery store, I decided to try the Swanson Chicken Broth. I was pleasantly surprised. There was more flavor to the broth than I thought there would be. I have taken to using it in my rice and pretty much anything else that requires broth.
With the cold weather during the long Ohio winters, I have made more soups and stews this winter than ever before. When I did a Google search for new recipes to try, a website that came coming up just happened to be Swanson’s website. So, since I like their broth, I figured they would know how to use their broth in some very good soups! I was right!! Visit their site for their yummy recipes of the Warm Winter Soups. I haven’t been able to try all the recipes, but my favorite so far is their Swanson® Roasted Chicken with Caramelized Onions Soup.
Ingredients:
2 cups shredded roasted chicken
2 tsp. vegetable oil
2 medium onions, halved and thinly sliced
8 cups Swanson® Chicken Broth (Regular, Natural Goodness™ or Certified Organic)
1/8 tsp. ground black pepper
2 medium carrots, sliced
2 stalks celery, sliced
3/4 cup uncooked trumpet-shaped pasta (campanelle)Directions:
Heat oil in 10" skillet over medium-high heat. Add onions and cook until they begin to brown, stirring occasionally. Reduce heat to medium. Cook until onions are tender and caramelized, stirring occasionally. Remove skillet from heat.
Heat broth, black pepper, carrots and celery in 4-qt. saucepan over medium-high heat to a boil. Stir pasta and chicken in saucepan. Reduce heat to medium. Cook 10 min. or until pasta is tender. Stir in onions and serve immediately.
