I decided to share my red pasta sauce recipe with you today. It’s nothing like the store brand Spaghetti’ sauce. It’s something quick & easy I like to make to go over top of my favorite pasta. So, here it is:
Stacy’s Red Pasta Sauce
Ingredients:
4 medium size Red Tomatoes
1 red pepper
1 large white or yellow onion
4-5 cloves of garlic
Salt
Pepper
Make sure you have your blender or food processor handy. On a cutting board cut the tomatoes, red pepper and onion into medium size chunks. Add them to the blender or food processor. Add the garlic cloves to that as well. Add about 1/2 – 1 cup of water to the blender and start it on your LOW Pulse setting. Make sure you don’t blend this into a liquid. Pulse the ingredients until they are chopped & blended. Pour the sauce into a small pot and add your salt & pepper to taste (Remember you can always add more, but once you add it you can’t take it away!). Turn the heat up to HIGH. Once it comes to a boil, let it continue to boil for about 10 minutes. Turn the burner to the LOW setting and let it continue to cook & simmer for about 15 –20 minutes.
Once it’s done cooking, pour it on top of the pasta of your choice! You will never go back to using store bought again!
