Do you guys have a favorite legume?  I do…. LENTILS!  There are many types of lentils and I’ve found that I love them all!  My baby girl has 6 teeth now, and one of her favorite things to eat is lentils and rice!  It’s so cute to watch her eat them.
I thought I’d share with you my “secret recipe”.  If you haven’t ever tried lentils, or perhaps you’ve tried them and didn’t like them, try the recipe below. 

brown lentils Ingredients:

1/2  bag of green/brown lentils (You can find these in any grocery store.  I’m partial to the GOYA brand. As a side note, this where I get the flour to make arepas)
2  1/2  cups of water
1/2 tablespoon of cumin
1/4 tablespoon of salt
1 pinch of black pepper

Instructions: 
Mix all these ingredients in one pot.  Bring them to a boil and let boil for approximately 10 minutes.  (Make sure while its boiling, to check the water.  If you see that the water is soaking into the lentils you can always add a little bit more.)  Once they’ve boiled, turn the burner down to a simmer and simmer for 15 - 20 minutes. Serve them as a side dish or serve them on top of rice as a meal.

    yuk. i do not like beans, legumes, not so much. in fact, my mom makes some supposedly world class baked beans, and in my 38 years on this planet, i’ve never tasted them.

    as a kid, the folks would offer me money just to try a baked bean. i never folded.

    as an adult, i have tried different bean recipes, and did like one puerto rican rice and beans dish a friend made. maybe i’ll give this lentil recipe of yours a shot.

    Yum! I made stuffed zucchini last night (I’ll post a great recipe under the “zucchini” post) and was trying to think of a different type of side to make for dinner. As soon as I saw this post, I was out looking for lentils. These were great,flavored pefectly. And you were right, I did need to add more water throughout cooking. With lentils costing just 95 cents a bag and being so nutritious, these will become a staple in our home. Thanks!

    I read your recipe and have just set a pot of lentils on the stove to boil. Thanks for the suggestion. We’re having cabbage on the grill tonight with salmon, and I thought the lentils would make a great side dish.
