Do you guys have a favorite legume? I do…. LENTILS! There are many types of lentils and I’ve found that I love them all! My baby girl has 6 teeth now, and one of her favorite things to eat is lentils and rice! It’s so cute to watch her eat them.
I thought I’d share with you my “secret recipe”. If you haven’t ever tried lentils, or perhaps you’ve tried them and didn’t like them, try the recipe below.
1/2 bag of green/brown lentils (You can find these in any grocery store. I’m partial to the GOYA brand. As a side note, this where I get the flour to make arepas)
2 1/2 cups of water
1/2 tablespoon of cumin
1/4 tablespoon of salt
1 pinch of black pepper
Mix all these ingredients in one pot. Bring them to a boil and let boil for approximately 10 minutes. (Make sure while its boiling, to check the water. If you see that the water is soaking into the lentils you can always add a little bit more.) Once they’ve boiled, turn the burner down to a simmer and simmer for 15 – 20 minutes. Serve them as a side dish or serve them on top of rice as a meal.
