I want to thank everyone that wrote in on my previous post regarding the boatload of tomatoes I had to deal with recently.  Unfortunately, I didn’t have the time to do any of the things mentioned, but I think I found another way to preserve them so that I can try some of those things.  I froze all of the tomatoes and you know what’s cooler than being cool?  A frozen freakin tomato.  I had no idea they would turn into rocks, but they did.  When you clack them together, they sound just like pool balls.  I even accidentally dropped one on the floor, didn’t hurt it one bit, not even a mark. 

Apparently, freezing tomatoes preserves them in such a way that the skins come off when thawed and they can be used just about any way a fresh tomato can be, other than maybe on a sandwich or salad.  Pretty sweet.  I can’t wait to use them and I’m thinkin’ that sweet tomato jam from the Alton Brown book sounds like a good idea.

    We go through tomatoes like there is no tomorrow. I can’t see ever getting to freeze them. Between pico de gallo, tuscan chicken wraps, and homemade baked spaghetti (just chop the tomatoes in half and bake in the oven)…I doubt I’ll get to try them like that.

    Wouldn’t the tomatoe lose some of its firmness? You’ll have to let us all know if they still taste right after you thaw a few out.
