Paladar, Northeast Ohio’s first Nuevo Latino restaurant, will serve unique combinations of Latin comfort foods in a colorful and trendy atmosphere when it opens August XX at Eton Chagrin Boulevard.

Owner Andy Himmel teams up with Executive Chef Matthew Mytro, also his top chef at Himmel’s first restaurant, Boulevard Blue, to create a bold menu that fuses dishes from many Latin American countries to offer an exciting and imaginative dining experience. Paladar is the second restaurant for Himmel, 27, a Northeast Ohio native.

I want to offer patrons something new and different, a restaurant that takes risks while also offering traditional options from Latin America,” said Himmel. “I want to offer patrons a glimpse of Latin culture. Paladar will be a place to relax: to discover delicious and unique food, sample our rum bar selections and listen to upbeat music.”

Describing itself as a Latin kitchen and rum bar, Paladar brings variety to the restaurant scene at its location on Cleveland’s east side. The menu takes cultural cues from Cuba, the Latin Caribbean and Central and South America and will offer comfort food such as rum-glazed Slow Roasted Pork “Cubano” accompanied by pigeon beans with coconut and mango rice and orange panela mojo to more contemporary offerings such as Sofrito Basted Scallops accompanied by roasted cauliflower with huacacini sauce, fingerling potatoes and preserved lemons.
