Like many people in Northeastern Ohio I am Catholic, so with Ash Wednesday occurring on the 21st the season of Lent began. That means no meat on Fridays for a couple of weeks. The recipe below is a favorite Lenten meal in my family. I know, you may think whoever made this the first time was wicked high, but it really does taste good.

Cream of Wheat Noodles
1 Stick of Margarine
12 oz. bag of egg noodles
2 C of Cream of Wheat
1. Bring a pot of water to a boil for the noodles. Pour the noodles into the pot.
2. In a large non-stick skillet, melt the entire stick of margarine and let it come to a slow simmer.
3. Once thoroughly cooked, drain the noodles in a strainer.
4. Pour one half of the Cream of Wheat into the margarine and stir. Cook for a minute or two on low. If the Cream of Wheat did not soak up all of the margarine, pour in a bit more until all of the margarine is absorbed. You may have some leftover Cream of Wheat.
5. Continue cooking the Cream of Wheat on low for another five minutes allowing it to brown lightly, but stirring regularly to prevent it from burning.

6. Dump the noodles into skillet with the Cream of Wheat and stir to coat the noodles. Don’t be afraid if it is a bit difficult to stir the noodles. Just take your time, it will come together.
7. Cook the mix on low for another 10 minutes to allow the some of the moisture to cook off. Remember to stir to prevent the noodles from burning.

These noodles are ready to eat.
8. Pour everything from the skillet into a serving bowl.
These noodles are great on their own, but they also go very well with sweet side dishes. My family always served sliced canned peaches and canned pineapple.
I personally think that these noodles are one of those dishes that are better the next day. I like to heat them up in a skillet and get them a little brown and crispy. Once they get to that stage, I pour in some scrambled egg. It’s a great breakfast or the perfect meal for Lent.
