While I was on vacation I jotted this recipe down, but I don't recall where I found it.  I can't wait to try it though.

Pancetta Wrapped Mushrooms

24 Porchini or Crimini Mushrooms
3 Cloves of Garlic, Thinly Sliced
3 Oz. Sliced Pancetta
1 T Olive Oil

Wash the mushrooms to remove any residual dirt.  Make a small slit in the top of each mushroom and insert one slice of the garlic.  Wrap each mushroom with a piece of the pancetta and secure it with a toothpick.  Arrange on a sheetpan and brush with olive oil.  Cook at 450° for 15 minutes.
