For those of you that don't already know, I am a loyal watcher of Anthony Bourdain's television show on the Travel Channel, No Reservations.  Bourdain is damn funny and I appreciate the fact that he is not a food snob.  In fact, he relishes inexpensive commoner food.  Last week, instead of touring a foreign country and exploring local food cultures, he spent time with Ferran Adria.  Prior to this episode the only time I had ever even seen the Ferran Adria name was on this quick post from Holy Shitake .  I was not expecting much.

After watching the show, I must say that Ferran Adria is truly changing food as we know it.  He's not cooking fusion food, he is literally inventing cooking methods and techniques.  Using science, he approaches his dishes by considering what it will do to the eater's mind.  For example, he had developed a technique where he can drop flavored liquid into water and create these little jelly balls.  On the show he used this method to create apple caviar.  Bourdain said that it felt exactly like caviar in his mouth, but with a nice rich apple taste. 

Adria is completely different than anything out there and quite possibly the most innovative chef of all time.  Keep an eye out for him because I have a feeling within a few years, he's going to be all over the place.
