Another late night at the office resulted in the need for a quick meal when I got home, so I turned to the staples of all staples my frozen pulled pork and corn tortillas. For those of you that have been reading here for a while, I do apologize for the large amount of posts that start with pulled pork and tortillas. Lets see, I've done tostadas, tacos and even nachos, so I guess the next logical step was quesadillas. That being said, my 100 count bag of corn tortillas is almost gone so the number of corn tortilla posts should be reduced in the very near future. The quesadillas are very easy to make which is the essence of most Mexican food. All you need is a corn tortilla, some cheese and if you really want to get crazy, some meat. I warmed up my cast iron skillet and once hot, I dropped in a few tortillas. I kept flipping the tortillas until they were warm enough to bend. I sprinkled on some shredded cheddar cheese and finely chopped pulled pork that I had mixed with a little bit of cumin and chili powder. Once the cheese starts melting you need to fold the tortilla in half so that the weight of the meat and cheese seals the quesadilla shut. A few more minutes and you have some delicious and authentic quesadillas. I topped my with a fresh salsa, a couple shots of hot sauce and a small dollop of sour cream. Actually, I think I'm going to have this again tonight.
