I had a good deal of smoked pulled pork leftover from last weekend, so I decided that I would try something new. A guy can only eat so many pulled pork sandwiches. I’ve recently discovered the versatility of corn tortillas, but I had yet to of tried baking them into nacho chips. I cut the tortillas into six triangles, arranged them on a baking sheet and cooked them for fifteen minutes at 350 degrees.
Don’t you just love how clean my oven is? Me too. Oh, those stone squares at the bottom there are slate tiles I use for pizza. I tried cooking the tortillas on them but they take too long to heat up to make it worth while.
While the chips were crisping up I heated up the leftover pork in the microwave. The pulled pork comes off in long strings that I didn’t think would work out well on the nachos, so I used a cleaver to chop it into small pieces, almost minced.
The chips were soon done. Actually they were overdone, but I was too busy screwing around with my dog to take them out at the right time. That being said, there is a right time to take them out. You want to make sure the chips break if you push on them. If you take the chips out before they loose enough moisture to break you won’t be able to chew them. It can feel like you are chewing on plastic, so make sure they will break.
From this point I simply piled a small amount of the pulled pork on a layer of chips, sprinkled on some cheddar cheese and popped it into the microwave for 30 seconds. And this is what you end up with:
At this point you can top the nachos with whatever you would like. I whipped up a quick salsa with tomatoes, onions, garlic, cilantro, salt and pepper.
I applied the salsa and what appears to be way too much sour cream to finish the dish off. And don’t forget the Chalula hot sauce, I poured that on there too.
It took me a while to make this meal, but everything here could be prepared ahead of time and then assembled when you were ready to eat. These are the best nachos you’ll ever have. What I think makes these nachos so good are the homemade chips. You don’t need those fried and salted chips to make good nachos.
