For those of you that are not Hispanic or are not lucky enough to live near a Hispanic community, you've probably never enjoyed the succulent taste of carnitas. I was looking through some food blogs today when I came across BBQ Junkie's Carnitas post. Although I am merely your average gringo, I have seen a real magician make carnitas in a caso just like they do in Mexico. It is really an art and I wouldn't even attempt it since I value my arms. Then again, the carnitas might be worth my arm. Well, my left arm. The BBQ Junkie provides a recipe for the carnitas and the pictures make my mouth water.
